Some Simple Camping Food Suggestions

When camping, it is important to take plenty of food and water to remain nourished. These items should be easy to store, easy to carry when out on the trail and easy to keep fresh. Non perishable and dried items are best to take, but perishable items can be used if you have access to a refrigerator or cooler that will maintain the cold for the duration of your trip.

There are specialty stores that carry food supplies specifically meant for camping. However, these items can be expensive. They usually consist of pre packaged food and meals that are freeze-dried. Often the food is bland and may not be as nutritious as a fresh meal.

With a little planning, however, it is possible to have nutritious, easy to prepare meals right from the grocery store. There are many foods that are light weight, easy to store and non perishable. Cereals, nuts, dried fruit and candy are great snacks and can be mixed for an energy boosting trail mix. All those ingredients are readily available in a grocery store and can be made up before leaving and stored in an airtight container. Adding some packets into your backpack will provide a healthy snack while on the trail.

Always bring plenty of water for hydration and cooking. Don’t forget you’ll also need water for cleaning dishes after cooking. You can also bring drink mixes and coffee or tea to mix with the water for a pick me up in the morning. Any foods that require simply adding water are great. Cup of soup packets where you just add some water and let it steep are great for a quick and easy warm meal or snack. They are great for cold weather to help keep warm.

Canned meats, meats that do not require refrigeration and canned vegetables are a good source of nutrition. Tuna fish and canned chicken can be used in numerous recipes. Making stews out of canned meats and canned vegetables will provide you a hearty meal that is easy to prepare and easy to clean. Salami does not need to be cooked and is great on crackers for a snack. Beef jerky is a traditional camping snack that will provide nutrition and boost energy while on the trail. Just remember though that if you take any canned goods to also bring a can opener.

For sweets, candy and dried fruits are excellent. But who can resist a traditional s’more? Marshmallows, chocolate bars and graham crackers are lightweight and can be carried and stored with ease. Sitting down to a fire while roasting marshmallows and melting chocolate onto the graham cracker is a fun way to satisfy the sweet tooth.

Remember that when you are camping you will need to carry items with you on hikes and nature walks. Choose items that are lightweight and do not require a lot of cleaning. Bring a variety of meats, cheeses, breads, snacks and sweets. Camping is a temporary state and you should concentrate on ease of preparation and fun. Do not worry that you may not be getting the most balanced meal or gourmet food. There’s plenty of time for that at home. Enjoy the campfire, keep your energy level up and have fun.

Easy Romantic Valentine’s Day Dinner Recipes

Valentine’s Day is just around the corner and if you’re like most folks, you want to find the least expensive and easiest ways to cook that romantic Valentine’s Day dinner for that special guy or gal.

Don’t spend a lot of time in the kitchen? Not to worry, there are lots of great recipes out there that don’t require any more skill than the ability to follow directions.

Appetizer:

exy Stuffed Mushrooms


Rich, easy and delicious

Ingredients:

Container of whole button mushrooms

Bread Crumbs

1 Teaspoon minced garlic

4 Tablespoons Butter

1/4 cup Parmesan Cheese

Preheat oven to 350F. Then, remove stems from mushrooms and keep caps intact. Saute caps in 2 tablespoons of butter until they soften up some. Take out of pan and place in shallow Pyrex casserole dish open end up. Mince mushroom stems and saute in pan with 2 tablespoons of butter and garlic. Add bread crumbs and mix with mushrooms and butter. Saute until butter has mixed well with mushrooms and bread crumbs. Turn off heat and mix in Parmesan cheese. Spoon mixture into mushroom caps and sprinkle additional Parmesan cheese on top of mushrooms. Bake for 20 minutes until piping hot and cheese has melted.

Main Course:

Exotic Asian Stir-Fried Steak and Noodles


Not too spicy, super-easy and quick

Ingredients:

1 package wide rice noodles

1/4 cup hoisin sauce

3 tablespoons soy sauce

1 teaspoon Asian spice

2 tablespoons onion, chopped

1 (1-pound) flank steak, trimmed and sliced into 1/4-inch strips

2 teaspoons vegetable oil

2 teaspoons minced garlic

2 medium tomatoes, each cut into 6 wedges

2 green onions, cut into 2-inch pieces

1 tablespoon chopped fresh basil

Cook noodles according to package directions.

While noodles cook, combine hoisin sauce, soy sauce, Asian spice and steak in a large bowl. Heat oil in a large nonstick skillet over medium-high heat. Add chopped onions and garlic; saute 30 seconds. Add beef mixture; cook 5 minutes, stirring frequently. Stir in tomato wedges, green onion pieces, and chopped basil; cook 2 minutes, stirring occasionally.

Dessert:

Sumptuous Strawberry Shortcake


Simple and sexy

Ingredients:

Fresh Strawberries

Container of Cool Whip

Sugar

Store-bought Shortcake

If you can’t find store-bought shortcake, get a plain yellow cake box mix and prepare in a 13″ x 9″ cake pan – follow the directions on the box and let cool. Slice strawberries and sprinkle with sugar to taste. Let sit for a couple of hours to allow strawberries to make their own juice. Refrigerate. When ready to serve, spread Cool Whip over shortcake and layer with strawberry mixture. Put layer of Cool Whip on top. Refrigerate any leftovers.

Beyond these recipes, don’t forget to dress your table up. A table cloth with matching cloth napkins, napkin holders and candles are a great start. Also, music can really set the mood. Pick music that you both like that’s soothing and sensual. Keep the volume low enough so conversation can flow freely. Make sure you blow out the candles before you retire to the other room.

Using Lipton Soup Packets to Enhance Everyday Dishes

Ever since I discovered Lipton soup mix years ago, it has been a regular staple in my cupboard. I use it on almost all beef recipes. Whenever a recipe calls for onions or bouillon, I substitute the soup mix. I usually don’t add extra salt, because it is already in the soup mix. One envelope per two pounds of beef seems to be a good ratio.

Here are some ideas for using Lipton Soup packets in your cooking.

Ground Beef Dishes

Brown two pounds of ground beef. When it is cooked thoroughly, sprinkle one envelope of soup mix over it and add about 1/2 to 1 cup of water. Cook for about 5 minutes longer, stirring the soup mix in well. Just cook long enough to have the water absorbed.

*Serve the ground beef over noodles or rice for an easy main dish.

*Mix with your favorite sloppy joe sauce and serve on buns.

*Mix with spaghetti sauce and pour over cooked spaghetti or rotini.

Meat Loaf and Hamburgers

The boxes of soup mix have recipes on them from Lipton. I especially like the meat loaf recipe and the hamburger recipe.

For the meat loaf, I follow the recipe, making these two changes. Instead of the water that is called for, I substitute canned evaporated milk. Instead of bread crumbs, I add dry oatmeal. This makes a delicious meat loaf that everyone raves about.

With the hamburgers, again I follow the recipe on the box, substituting barbecue sauce for ketchup. It adds a little extra zip.

Slow Cooker Roast

Brown a two-pound roast in shortening in a skillet. Place in crockpot. Add one envelope of Lipton beefy onion or beefy mushroom soup mix, sprinkling it over the top of the roast. Pour a jar of brown, au jus, or mushroom gravy over the meat. Fill the jar with water, replace the lid and shake it up. Then pour this over the roast. Set the crockpot on low and cook for about eight hours. You may need to gauge this and add more water, but usually you don’t need a lot of water for the crockpot.

Baked Steak

I prepare baked steak in a similar way as the roast.

Preheat oven to 350 degrees. Brown two pounds of steak in shortening or oil in a skillet. Transfer to a 13 by 9 cake pan.

In a separate sauce pan, mix one package of dry soup mix, two cans of mushroom soup, and two soup cans of water. Heat and stir for a few minutes till it is mixed well. Then pour this over the steak in the cake pan. Cover with foil

Bake for 2 to 2 1/2 hours, or until steak is thoroughly done and tender. Check every so often to see if more water needs to be added.
